Citrus Jam

Bitter orange jam is undoubtedly the queen of jams. Here we present a variation made with the citrus fruits from my garden.

  • 2 kilos citrus, sweet and bitter orange, tangerine, lime
  • 2 kilos sugar, granulated
  • 1 lime, large

  • Follow the sterilization instructions in the Express Pressure Cooker® for the jars and lids before and after filling them.
  • Remove very thin strips of the peels from the citrus fruits using a peeler, without taking the membrane (white skin) and set aside.
  • Place the citrus fruits on a cutting board and remove all the white membrane (bitter) using a sharp knife. Slice the flesh into thin rounds and remove the seeds.
  • In an Express Cooker®, place the slices of the citrus fruits, add the peels and one liter of water. Close the Express Pressure Cooker® and put on the pressure regulator, place it on the stove over high heat for about 25 minutes or until a constant stream of steam comes out, then lower the heat to medium and cook for 10 minutes.
  • Remove the Express Pressure Cooker® from the heat, let it cool, take off the pressure regulator, open the Express Pressure Cooker® and you're done!
  • Add the sugar, return to high heat and mix until it dissolves. Stir occasionally until it caramelizes (browns), about 50 minutes. Although it may look very liquid, it will thicken as it cools.
  • Immediately pour (practically boiling) into the sterilized jars.
