Plum Sauce

This delicious plum sauce is ideal for shredded pork or smoked ham, as it has a sweet and sour flavor.

  • 2 tablespoons butter
  • 1 cup onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1 cup white wine
  • 1 cup chicken broth
  • 2 cups prunes, seedless
  • salt
  • pepper

  • Heat the butter in a pot and cook the onion and garlic for 5 minutes.
  • Add the white wine, chicken broth, and prunes to the pot. Cook over medium heat for 10 minutes or until the prunes are hydrated. Set aside.
  • Blend everything for 5 minutes, until you have a very smooth sauce. Season with salt and pepper.
  • Serve the plum sauce in a sauceboat and accompany it with pork loin.
