Roast the tomatoes and chiles in a skillet.
Finely chop the onion.
In a mortar and pestle, crush the tomatoes and chiles (without the stem) gradually.
Add the onion and continue grinding the sauce in the mortar and pestle.
Add salt to taste and a splash of olive oil.
