  • 2 cloves garlic
  • 1/4 onions
  • 1/2 cups guaje
  • 4 tomatillos
  • 3 tomatoes
  • 1 Jalapeño chile
  • coarse salt
  • 3 tablespoons olive oil

  • Roast the garlic cloves, onion, guaje, tomatoes, and jalapeño pepper on a griddle until well cooked.
  • Place the garlic cloves and coarse salt in a molcajete and grind until a paste forms. Gradually add the rest of the ingredients until you obtain a sauce.
  • Finally, pour a drizzle of olive oil and finish mixing.
  • Serve the tacos placeros and accompany with the guaje sauce.
