Clean the tomatillos thoroughly, remove the husk, and rinse with cold water. Then, cut them in half and set aside.
Pour a little vegetable oil into a pot, add the onion, garlic, the tomatillos you cut, and sauté for 3 minutes. Then, pour in the chicken broth, cilantro, and boil for 5 minutes.
Blend for 3 minutes or until the green sauce is smooth.
Heat a pot over medium heat, pour in a little vegetable oil, add the blended sauce and a sprig of epazote. Fry for 3 minutes and don’t forget to season the green sauce with salt. Remove and it’s ready to serve.
