  • 10 tomatillos
  • water, fry

  • 1/4 onions
  • 2 cloves garlic
  • 4 cups chicken broth
  • 3 cups cilantro
  • vegetable oil
  • 1 sprig epazote

  • Clean the tomatillos thoroughly, remove the husk, and rinse with cold water. Then, cut them in half and set aside.
  • Pour a little vegetable oil into a pot, add the onion, garlic, the tomatillos you cut, and sauté for 3 minutes. Then, pour in the chicken broth, cilantro, and boil for 5 minutes.
  • Blend for 3 minutes or until the green sauce is smooth.
  • Heat a pot over medium heat, pour in a little vegetable oil, add the blended sauce and a sprig of epazote. Fry for 3 minutes and don’t forget to season the green sauce with salt. Remove and it’s ready to serve.
