Morita Chile Sauce

It is a sauce that can be used directly or diluted for stews of red or white meat and fish or seafood. It has a toasted flavor and a light spiciness, ideal for sopes or chalupas.

  • 8 dried morita chiles
  • 10 red tomatoes, saladet
  • 1 onion, medium
  • 4 allspice berries
  • 1 tablespoon coarse salt
  • 1 pinch sugar
  • 3 cloves garlic

  • On a griddle or comal, toast the morita chiles.
  • The tomatoes are roasted until the skin is burned, the onion and garlic are lightly roasted. Once all four ingredients are roasted, remove the seeds from the chiles and blend all the ingredients in a blender; the ingredients should not be completely ground. Once blended, the sauce is ready to be used directly or sautéed by adding a little water or broth to use with your preferred pre-cooked meat.
