The tomatoes are roasted until the skin is burned, the onion and garlic are lightly roasted. Once all four ingredients are roasted, remove the seeds from the chiles and blend all the ingredients in a blender; the ingredients should not be completely ground. Once blended, the sauce is ready to be used directly or sautéed by adding a little water or broth to use with your preferred pre-cooked meat.
