coarse salt, to boil the nopales
1/4 white onions, to boil the nopales
1 garlic, to boil the nopales
2 cups nopal, in medium cubes
3 tomatoes, roasted, for the sauce
2 cloves garlic
1/4 onions
2 tablespoons chiltepin pepper
2 chipotle chiles in adobo sauce
1 teaspoon oregano
salt, for the sauce
1/4 red onions, roasted, for the sauce
1 cup cilantro, finely chopped
avocado, in small cubes, for decoration
Chiapas Cheese, crumbled
tortilla chips, to accompany

Add the onion, garlic, salt, and nopales in a pot with water over high heat. Cook for 15 minutes, or until the nopales are tender.
Strain the nopales and set aside.
Place a sheet of aluminum foil on a griddle over medium heat and add the tomato, onion, and garlic. Roast for 15 minutes.
Add the roasted ingredients to a molcajete and grind, then incorporate the chiltepín pepper, chipotle pepper, oregano, and salt.
Combine the sauce, nopales, red onion, and cilantro in a bowl. Mix for 2 minutes.
Serve the nopal sauce, decorate with avocado and cilantro, and accompany with tortilla chips.
