Pastor-style salsa

  • 1/4 onions
  • 1 clove garlic
  • 4 guajillo chiles
  • 1 árbol chile
  • 1/2 cups water
  • 1 tablespoon achiote
  • cumin

  • 1/8 cups pineapple juice
  • 2 tablespoons apple cider vinegar
  • salt
  • pepper
  • tortilla chips
  • pineapple chips

  • Heat the onion, garlic clove, guajillo chiles, and árbol chile in a skillet for 5 minutes or until roasted. Then, add the water, achiote, cumin, and clove. Let it boil for another 5 minutes.
  • Blend all the roasted and boiled ingredients with the pineapple juice, apple cider vinegar, salt, and pepper until you achieve a salsa consistency.
  • Serve the pastor-style salsa and accompany with tortilla chips, tacos, stews, and more.
