Pineapple Sauce for Tacos

  • 1 clove garlic
  • 2 Habanero chiles
  • 6 tomatillos
  • 1/4 onions
  • 2 slices pineapple
  • salt
  • pepper
  • 1/2 cups red onion, finely chopped
  • 1/4 cups cilantro, finely chopped

  • Roast the garlic, habanero chili, tomatillo, onion, and pineapple on a griddle for 5 to 8 minutes. Remove when the ingredients are charred on both sides.
  • Blend the garlic, habanero chili, tomato, onion, salt, and pepper. Set aside.
  • Cut the pineapple into small cubes.
  • Pour the sauce into a bowl and garnish with pineapple, red onion, and cilantro.
