  • 2 cups water
  • salt
  • 1 tablespoon clove
  • 1 teaspoon cumin
  • 1 tablespoon allspice berry
  • 1 teaspoon black pepper
  • 1 tablespoon oregano
  • 1 cinnamon stick
  • 5 bay leaves
  • 1 teaspoon cilantro seeds
  • 1 sprig rosemary
  • 2 sprigs thyme
  • 4 cloves garlic, peeled
  • 4 guajillo chiles
  • 8 árbol chiles
  • 1/2 cups serrano chile, in thin strips
  • 1/2 cups red onion, in thin strips
  • 1 cup carrot, in thin strips
  • 1 cup celery, in thin strips

  • Heat the vinegar, water, salt, clove, oregano, cumin, allspice, cinnamon, bay leaf, rosemary, garlic, coriander seeds, guajillo, and árbol chili in a pot over medium heat. Cook for 10 minutes on low heat, remove from heat, and let cool completely.
  • Add the serrano chili, red onion, carrot, and celery to a sterilized container. Pour in the liquid with the spices, close it, and let it rest for 3 days.
