Ayotlmole

Humble and rustic food, this ayotimole recipe is one of my favorites; it's very simple and very delicious, give it a try, you'll love it!

  • 2 zucchinis, well tender and diced
  • 1 white onion , finely chopped
  • 2 leaves bay
  • 3 cloves
  • 7 grains black pepper
  • 3 tomatillos, long, bright red, sliced into half-moons
  • 1 clove garlic

  • Sauté the garlic until golden in a hot skillet.
  • Then add the onion until softened, add the tomato and chopped zucchini along with the seasonings.
  • Cook for 15 to 25 minutes on low heat, add salt to taste, and serve hot.
