Baby Potatoes with Butter

  • 1 kilo new potatoes
  • 4 teaspoons butter
  • 1 teaspoon olive oil, or vegetable
  • 1 bunch fresh cilantro, finely chopped
  • 1 pinch salt
  • 1 teaspoon pepper
  • 1 onion, cut into julienne

  • Wash the baby potatoes very well
  • In the baking dish you will use, place the potatoes and season them with salt and pepper to taste.
  • Place the butter in such a way that it covers the potatoes when it melts.
  • Bake until they are soft inside.
  • Once they are done, sprinkle the cilantro evenly.
  • To give it a crunchy flavor, cut an onion into very fine julienne and fry until crispy.
  • Spread the onion evenly over the potatoes.
