Baked Squash

Delicious baked squash side dish, perfect for vegetarians or those on a light diet.

  • 3 zucchinis
  • 3 pumpkins, yellow
  • 1 1/2 tablespoons kosher salt
  • 1/2 tablespoons black pepper, freshly ground
  • 3 tablespoons extra virgin olive oil

  • Preheat the oven to 200 °C.
  • Wash and peel the squash. Cut them into very thin slices. Place them in a baking dish that can go in the oven, alternating the colors.
  • Pour a little olive oil over all the squash; you can use a spoon to avoid pouring too much oil.
  • Sprinkle salt and pepper over all the squash. Bake for 30 minutes.
