Baked Sweet Potatoes

  • 4 sweet potatoes
  • 2 cups bacon, in cubes
  • 2 cups onion, sliced
  • 1 tablespoon thyme, finely chopped
  • salt
  • pepper
  • 1/3 cups orange juice
  • sour cream, for decoration

  • Brush aluminum foil sheets with butter. Poke the sweet potatoes with a fork and wrap each one in aluminum foil. Bake at 200 °C for 45 minutes or until cooked.
  • In a skillet, fry the bacon for 3 minutes and add the onion, thyme, salt, and pepper. Cook for 3 more minutes and pour in the orange juice. Cook until reduced.
  • Remove the sweet potatoes from the aluminum foil. Cut lengthwise, slightly mash the center, add the bacon and onion mixture, and decorate with a bit of sour cream.
