Beans with martajada sauce

  • 2 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • 1 ancho chile
  • 1 guajillo chile
  • coarse salt
  • 3 tablespoons olive oil
  • 1 tablespoon vegetable oil
  • 2 cups pinto beans, whole and cooked
  • cilantro, finely chopped
  • tortilla chips

  • Roast the tomatoes, onion, garlic, and chiles until charred.
  • Place the olive oil, coarse salt, and roasted garlic in a molcajete. Mash and add the chiles, then incorporate the tomato and onion and continue mashing.Adjust the seasoning and set aside.
  • Heat the oil in a pan and sauté the beans for 5 minutes or until the liquid is reduced.
  • Serve the beans in the same molcajete with the martajada sauce, sprinkle cilantro, and mix. Serve with tortilla chips!
