Refried Beans with Bacon and Pasilla Chile

Refried beans are always a hit, prepare these delicious refried beans with bacon and the flavor of pasilla chile, flavored with avocado leaf, served with cotija cheese that will give it an incredible touch, so you can enjoy them with crispy tortilla chips and a flank steak.

  • 1 tablespoon lard
  • 10 slices bacon, finely chopped
  • 4 pasilla chiles, seeded and deveined
  • 1/2 cups white onion, finely chopped
  • 2 cups pinto beans, from the pot with little broth
  • 1 avocado leaves
  • 1 pinch salt
  • 1/2 cups Oaxaca cheese
  • 1/4 cups Cotija cheese, grated, for garnish
  • fresh cilantro, for garnish
  • tortilla chips, for serving
  • pasilla chile, in rings, fried for garnish
  • 120 grams skirt steak

  • Heat a skillet over medium heat with the lard, cook the bacon until it releases all the fat and is completely fried, fry the pasilla chile over low heat until the fat in the skillet takes on a reddish color, remove most of the chiles and set aside.
  • Fry the onion and add the beans with all the liquid, add the avocado leaf and cook until it comes to a boil, season to your liking, mash until it forms a paste and the liquid reduces by half.
  • Add the Oaxaca cheese and continue stirring until it melts completely and all the liquid evaporates.
  • On a greased grill, cook the flank steak until well done.
  • Serve the beans, sprinkle with cheese, add a fresh epazote leaf and the rings of pasilla chile, serve with tortilla chips and a flank steak.
