  • 1 broccoli, (1 1/2 cup) cut into small pieces
  • 1 clove garlic
  • 2 Poblano chiles, roasted, sautéed, skinless and seedless
  • 1/2 cups vegetable broth
  • 1 tablespoon onion powder
  • salt
  • 1 tablespoon vegetable oil
  • 1 cup Poblano chile strips
  • fresh cilantro, for garnish

  • Place the broccoli in the processor and grind until you achieve a “rice” consistency.
  • Blend the garlic with the poblano peppers, vegetable broth, onion powder, and salt until you obtain a homogeneous mixture.
  • In a pot, heat the oil over medium heat and cook the broccoli for a few minutes. Add the previous mixture and the strips, and cook on low heat until the liquid is consumed. Adjust seasoning.
  • Serve the rice garnished with cilantro.
