  • 1 kilo Sos® brown rice, boiled
  • 2 kilos spinach, sliced
  • 1 kilo chicken breast , boiled and shredded
  • 2 red onions, sliced
  • 400 grams cranberries, whole blueberries
  • 700 grams Manchego cheese, chopped
  • olive oil
  • lemon juice
  • salt , to taste

  • To cook the rice, it is not necessary to rinse it; for every 1 cup of rice, use 2 cups of water. First, heat the water, and when it is about to boil, add the rice and let it cook for 20 minutes over medium-low heat to prevent the rice from breaking. Let it cool.
  • Place each ingredient (rice, spinach, chicken breast, red onion) in a wide, shallow dish, forming little mounds. Drizzle olive oil and lemon juice over each ingredient so that they absorb the flavor and season perfectly. Let it rest for 2 minutes and then mix with the cheese, blueberries, and salt.
