  • 1 cauliflower, cut into small pieces
  • water
  • salt
  • 2 tablespoons butter
  • black pepper, freshly ground
  • 1/4 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon dill, finely chopped
  • 1 sprig parsley, fresh, for garnish

  • In a pot with boiling salted water, cook the cauliflower for 35 minutes or until very soft. Drain and cool slightly.
  • Mash the cauliflower in a food processor with the butter until smooth. Season with salt and pepper. Keep warm.
  • In a pot over low heat, warm the olive oil. Once it is very hot, remove and add the lemon zest, letting it infuse for a few minutes. Cool.
  • Mix the infused oil with parsley and dill.
  • Serve the cauliflower purée and drizzle a bit of the oil on top, garnishing with a sprig of parsley. Serve.
