Chorreadas Potatoes

Potatoes with tomato stew, I love this recipe for chorreadas potatoes, it is very delicious as a side dish and you will see that everyone will love it.

  • 2 potatoes, cooked
  • 1 cube chicken broth
  • 4 ripe tomatoes, peeled and chopped
  • 2 tablespoons margarine
  • 1 canned heavy cream
  • 1 teaspoon fresh cilantro, chopped
  • 1 pinch achiote , powder
  • 1 cup fresh white cheese, grated

  • Boil the potatoes until they are soft
  • In a skillet over medium heat, melt the margarine until it boils without burning, add the onion, the powdered achiote, and the chicken broth, and sauté.
  • Incorporate into the butter mixture the cream, cilantro, and grated cheese, mix well until the cheese melts
  • Check the flavor and season with salt and pepper if necessary
  • At the moment of serving, pour the stew over the hot potatoes
