Crispy Potatoes

A perfect side dish to impress your guests. It's delicious and very easy to prepare, plus it pairs perfectly with fish dishes. Prepare them.

3 tablespoons thick cream
1 tablespoon shallot, chopped
salmon roe
2 tablespoons lime juice
3 tablespoons fresh white cheese
salt and pepper

Steam the potatoes with the skin on.
Peel the potatoes once they are soft.
Cut the potatoes into approximately 4x4 cm cubes and scoop them out with a corer.
Freeze for a minimum of 2 hours.
Fry the potatoes in a pan with plenty of hot oil.
Drain on absorbent paper and add a little salt.
Mix in a bowl the cream, shallot, salmon roe, lemon, and cheese.
Season the mixture with salt and pepper.
Fill the potatoes with this mixture and decorate with a little salmon roe.
