Crispy Potatoes

A perfect side dish to impress your guests. It's delicious and very easy to prepare, plus it pairs perfectly with fish dishes. Prepare them.

  • olive oil
  • 4 potatoes
  • 3 tablespoons thick cream
  • 1 tablespoon shallot, chopped
  • salmon roe
  • 2 tablespoons lime juice
  • 3 tablespoons fresh white cheese
  • salt and pepper

  • Steam the potatoes with the skin on.
  • Peel the potatoes once they are soft.
  • Cut the potatoes into approximately 4x4 cm cubes and scoop them out with a corer.
  • Freeze for a minimum of 2 hours.
  • Fry the potatoes in a pan with plenty of hot oil.
  • Drain on absorbent paper and add a little salt.
  • Mix in a bowl the cream, shallot, salmon roe, lemon, and cheese.
  • Season the mixture with salt and pepper.
  • Fill the potatoes with this mixture and decorate with a little salmon roe.
