Delicious Chipotle Rice

This delicious Chipotle Rice is an excellent recipe to serve as an appetizer or side dish. The best part of this recipe is that you won’t have to worry about where to buy red rice, as it is so easy that you will want to cook it whenever you can. In Mexico, rice is very common, and Chipotle Rice is a variety of this tasty dish, as it has a spicy touch. You can use medium-grain rice or short or long-grain rice, whichever you prefer. Accompany your dishes with this recipe, adding avocado for a delicious flavor.

  • 3 tomatoes
  • 4 chipotle chiles in adobo sauce
  • 1/4 cups onion
  • 1 garlic
  • 1 cup chicken broth
  • salt

  • 2 cups rice, soaked and drained
  • vegetable oil
  • 3 cups chicken broth
  • 1/4 cups corn kernels
  • 1/4 cups peas
  • 1/4 cups carrot, in cubes
  • epazote
  • 1 chipotle chile, dry

  • Blend the tomato with the chipotle, onion, garlic, one cup of chicken broth, enough salt, and pepper until you achieve a smooth mixture. Set aside.
  • In a medium saucepan, heat the oil and fry the rice, stirring occasionally to avoid breaking it. When the rice has a golden color, remove the excess oil and pour in the tomato mixture, allowing it to absorb slightly before adding the rest of the chicken broth, the vegetables, epazote, and dried chipotle pepper.
  • Once it comes to a boil, cover and reduce the heat. Cook for 20 to 30 minutes or until the rice is cooked and the liquid has been completely absorbed. Let it rest for 10 minutes before serving.
