Dry Noodles with Chile

  • 2 packages fidelini pasta
  • 2 cups tomato purée
  • 1/4 onions
  • 2 guajillo chiles, seedless
  • 5 cups water
  • queso fresco, grated
  • sour cream
  • 1 avocado, in slices

  • Fry the noodles in oil until golden brown.
  • Finely chop the onion and the chile into small pieces. Add these ingredients to the pan with the noodles along with the tomato puree.
  • Add the water and wait for it to boil, cover the pan to let the water evaporate.
  • Stir occasionally to prevent the noodles from sticking, serve with fresh cheese, cream, and avocado slices.
