Duchess Potatoes

An elegant way to serve mashed potatoes that is very easy. This recipe is ideal if you have leftover mashed potatoes from the day before.

  • 750 grams potato
  • 3 tablespoons butter
  • 4 tablespoons cow's milk
  • 2 eggs
  • 1 teaspoon nutmeg
  • pepper

  • Peel the potatoes and cut them into 2 cm square cubes.
  • In a large pot of salted boiling water, cook the potatoes until they are well done and very soft.
  • Remove the potatoes from the water, allow them to cool for 5-10 minutes, and mash them.
  • Add the butter and milk, and season with salt, pepper, and nutmeg. If you want them creamier, you can add more milk and butter.
  • Preheat the oven to 120 degrees Celsius and prepare a baking tray with parchment paper.
  • Using a piping bag, shape the duchess potatoes with the mashed potatoes.
  • Bake the potatoes for 25 minutes. Remove from the oven and brush the tops with the yolk mixed with milk, then return to the oven. Bake for an additional 20 minutes.
