Green beans, also known as string beans, are a delicious side dish. In this recipe, they are prepared with pine nuts, garlic, onion, and a touch of lemon juice.
Heat the oil in a large skillet and fry the pine nuts for 1 minute.
Move the pan continuously until they are lightly browned (to prevent burning).
Remove the pine nuts and let them drain on paper towels. Add paprika to the pine nuts until they turn red. Set aside the green beans and the remaining oil in the pan.
Trim the green beans and remove the strings if necessary.
Place the green beans in a pot of boiling water and cook for 5 minutes or until tender but firm. Drain in a colander.
With the leftover oil in the pan, sauté the onion for 5-10 minutes. Add the garlic and fry for another 30 seconds.
Put the green beans in the pan and mix them with the onion and garlic until heated through.
Add the lemon juice, stir, and sprinkle the pine nuts on top. Serve immediately.
