Glazed and Shredded Carrots

A simple recipe to prepare shredded and caramelized carrots in butter and sugar with a hint of ginger.

  • 1 kilo carrot , peeled and shredded
  • 4 tablespoons unsalted butter
  • 2 1/2 tablespoons sugar
  • 1/8 teaspoons ginger powder
  • 1 tablespoon parsley

  • Grate or cut the carrots into thick strips.
  • In a deep pot, melt the butter over medium heat. Add the carrots, sugar, ginger, salt, and pepper. Adjust the seasoning.
  • Add enough water to cover the carrots (no more) and cover until it boils and they take on a bright orange color, about 5 minutes maximum.
  • Uncover the pot and continue cooking over medium-high heat until the water evaporates, for another 5 minutes.
  • Continue cooking until the carrots are caramelized in the butter and sugar mixture.
  • Garnish by sprinkling with parsley and enjoy.
