Glazed and Shredded Carrots

1 kilo carrot , peeled and shredded
4 tablespoons unsalted butter
2 1/2 tablespoons sugar
1/8 teaspoons ginger powder
1 tablespoon parsley

Grate or cut the carrots into thick strips.
In a deep pot, melt the butter over medium heat. Add the carrots, sugar, ginger, salt, and pepper. Adjust the seasoning.
Add enough water to cover the carrots (no more) and cover until it boils and they take on a bright orange color, about 5 minutes maximum.
Uncover the pot and continue cooking over medium-high heat until the water evaporates, for another 5 minutes.
Continue cooking until the carrots are caramelized in the butter and sugar mixture.
Garnish by sprinkling with parsley and enjoy.
