Gorgonzola Cheese Gratin Broccoli

2 kilos broccoli
6 1/2 tablespoons unsalted butter
3/4 cups breadcrumbs
4 1/2 cups flour
3 cups cow's milk
1 teaspoon salt
1 teaspoon pepper
1 1/8 cayenne pepper
90 grams gorgonzola cheese, or another blue cheese, crumbled

Preheat the oven to 180 degrees.
Grease a large Pyrex dish with butter.
Steam the broccoli cut into florets for 15 minutes or until tender.
In a skillet over medium-high heat, melt 1 tablespoon of butter. Add the breadcrumbs and stir until golden brown, about 5 minutes. Set aside.
In a medium pot, melt 4 and a half tablespoons of butter.
When the butter is melted, add the flour and stir well with a whisk until smooth.
Add 1 cup of milk to the pot and stir with a whisk until it thickens slightly, about 7-10 minutes.
Add another cup of milk and stir again until it thickens (5-7 minutes).
Finally, add the rest of the milk and wait 5 minutes while stirring until it thickens.
Add the crumbled Gorgonzola cheese and stir until melted, about 2 minutes.
Place the broccoli in the greased dish and drizzle with the prepared white sauce.
Sprinkle with the breadcrumbs
Cut the other tablespoon of butter into pieces and place on top.
Bake for 20 minutes until golden on top and bubbling.
Serve hot.
