Preheat the oven. Place the butter in a pan and when it has melted, add the spinach. Sauté until wilted.
Add the onion and mushrooms. Stir and sauté as well, until the onion is wilted.
On each piece of puff pastry, place a slice of mozzarella cheese. Then, add the sautéed spinach. Sprinkle a teaspoon of parmesan cheese.
Roll up the dough. Place parchment paper on a baking sheet and place the rolls on the paper. Drizzle each one with a tablespoon of olive oil and 1 teaspoon of parmesan cheese (or to taste).
Bake until the dough is done (approximately 20 minutes).
