Rinse the spinach a bit; place the bunch of spinach (only the leafy part) in a pot with boiling water for about 10 minutes.
Remove the bunch of spinach from the water and chop the leafy part, avoiding the part of the bunch that did not cook.
For the sauce: mix the tomato puree well with a pinch of powdered broth and add salt and pepper to taste.
In a glass baking dish, place the spinach and generously spread the sauce over them; place a layer of cheese for quesadillas on top (as much as you desire).
Microwave for about 40 seconds, or until the cheese is golden.
