These green beans with eggs and tomatoes are an excellent side dish for your meat and poultry dishes.

1/2 kilos green beans, fresh
3 tomatoes, large, peeled, and chopped
1 tablespoon onion, finely chopped
3 eggs
2 tablespoons olive oil

The green beans are peeled, removing the string around them. They are washed and boiled in salted water.
Once cooked, they are drained.
In a saucepan, the oil is heated and the onion is sautéed.
The whole or chopped green beans and the tomato, peeled, seeded, and chopped, are added, seasoned with salt and pepper, and covered.
Once the green beans and vegetables are well fried, the eggs are broken in and everything is stirred very vigorously to incorporate.
Once the eggs are set, they are removed and served.
