Green Beans with Eggs and Tomatoes

These green beans with eggs and tomatoes are an excellent side dish for your meat and poultry dishes.

  • 1/2 kilos green beans, fresh
  • 3 tomatoes, large, peeled, and chopped
  • 1 tablespoon onion, finely chopped
  • 3 eggs
  • 2 tablespoons olive oil

  • The green beans are peeled, removing the string around them. They are washed and boiled in salted water.
  • Once cooked, they are drained.
  • In a saucepan, the oil is heated and the onion is sautéed.
  • The whole or chopped green beans and the tomato, peeled, seeded, and chopped, are added, seasoned with salt and pepper, and covered.
  • Once the green beans and vegetables are well fried, the eggs are broken in and everything is stirred very vigorously to incorporate.
  • Once the eggs are set, they are removed and served.
