Green Rice from Puebla

  • 3 tablespoons vegetable oil
  • 1 cup white rice
  • 2 cloves garlic, for the sauce
  • 1/4 onions, for the sauce
  • 1 cup Poblano chile, in strips
  • 1 cup tomatillo
  • 1 bunch fresh cilantro, cleaned and disinfected
  • 1/3 cups corn kernels, yellow
  • 1/3 cups peas
  • Poblano chile strips, for garnish

  • Wash the rice carefully so as not to break the grain and remove the excess starch.
  • Sauté the rice with a little oil until it is slightly golden.
  • Blend the poblano pepper, garlic, onion, salt, pepper, tomatillo, serrano pepper, and cilantro, and season with vegetable broth.
  • Add the poblano pepper mixture to the rice by passing it through a strainer, add the yellow corn kernels, and peas.
  • Cook until it comes to a boil, cover, and reduce the heat to the minimum, cooking for about 25 minutes.
  • Garnish with poblano strips and enjoy.
