Herb-Roasted Vegetables

This delicious side dish is perfect to accompany lemon salmon.

  • 2 cups new potatoes
  • 2 cups carrot, baby
  • 4 tablespoons olive oil
  • 2 tablespoons rosemary, chopped
  • 2 garlic, chopped
  • salt
  • pepper

  • Place all the ingredients in a baking dish and mix until combined, cover with aluminum foil, and bake at 180 °C for 25 minutes.
  • Remove from the oven and serve as a side dish with lemon salmon.
