Herbed Potato Salad

A delicious and simple potato salad that can be prepared a day in advance.

  • 1 1/2 kilos red potato, small
  • 3 tablespoons rice vinegar
  • 3/4 cups mayonnaise
  • 3 green onions , medium, thinly sliced
  • 1 celery, cut into 1/2 cm cubes
  • 1/4 cups parsley , chopped
  • 1/4 cups basil
  • 2 tablespoons fresh dill, chopped
  • 1 1/2 teaspoons lime zest

  • Bring the potatoes to a boil in a large pot with water. Reduce the heat and cook until the potatoes are tender, about 17 minutes. Drain and let rest for 20 minutes.
  • Cut the potatoes into pieces.
  • Place a layer of potatoes in a bowl and sprinkle with a little vinegar, salt, and pepper. Continue layering the potatoes with vinegar, salt, and pepper.
  • Add the remaining ingredients and mix well.
