Peel the potatoes and using the food processor, slice them into strips just like the onion.
Mix the potatoes and onion and add the lemon, flour, 2 tablespoons of salt, and 2 tablespoons of pepper. Add the egg and mix well.
In a large skillet, heat the oil. Once it's very hot, fry the latkes by making balls with the potato mixture and flattening them with a spatula during cooking.
Remove from the oil and dry well to remove excess fat.
Serve with applesauce or apple puree. Or if you want to try new combinations, serve them with cream and salmon.
