Latkes with Applesauce

A traditional recipe for the Hanukkah festival, latkes are made from grated potatoes and are traditionally served with applesauce.

  • 6 potatoes
  • 1 onion
  • 2 tablespoons lime juice
  • 1/3 cups flour
  • 3 eggs, lightly beaten
  • 1 cup vegetable oil
  • applesauce

  • Using a food processor, slice the onion into strips.
  • Peel the potatoes and using the food processor, slice them into strips just like the onion.
  • Mix the potatoes and onion and add the lemon, flour, 2 tablespoons of salt, and 2 tablespoons of pepper. Add the egg and mix well.
  • In a large skillet, heat the oil. Once it's very hot, fry the latkes by making balls with the potato mixture and flattening them with a spatula during cooking.
  • Remove from the oil and dry well to remove excess fat.
  • Serve with applesauce or apple puree. Or if you want to try new combinations, serve them with cream and salmon.
