Preheat the oven to 320 F and place a baking tray in the upper part of the oven. Grease a 30-centimeter diameter mold with olive oil.
Put the gouda cheese in the food processor and chop it finely. Add the spinach, whole eggs, egg whites, ricotta cheese, flour, and nutmeg, and process until well combined (about 30 seconds). Add the scallions and stir.
Pour the mixture into the greased mold and sprinkle with parmesan cheese and paprika. Place the quiche on the preheated baking tray and cook until the center is set, about 25-30 minutes.
