Marinated Vegetable Skewers

  • Soak the wooden skewers in water for 1 hour.
  • Assemble the skewers with colorful bell peppers, mushrooms, zucchini, cherry tomatoes, blanched green onions, cauliflower, or broccoli, placing the bell peppers between each of the other ingredients.
  • For the marinade of the skewers, in a glass bowl add chopped parsley, chopped basil, garlic powder, honey, lemon juice, olive oil, salt, and pepper to taste.
  • Marinate the skewers in the previous mixture for about 1 hour, basting constantly.
  • Cook the skewers until all the ingredients are well browned, basting whenever necessary for great flavor.
  • Serve hot as a side dish.
