Menguiche

With this recipe, you can prepare a delicious Mexican menguiche that includes ricotta and corn, plus a bit of epazote for added flavor.

  • 1 kilo requesón
  • 50 grams unsalted butter
  • 1 can corn kernel
  • 1/2 onions, finely chopped
  • 3 leaves epazote, (optional)
  • salt , and pepper to taste
  • granulated chicken bouillon, to taste

  • Place the butter in a skillet over heat, and once it is melted, add the finely chopped onion. Once it is translucent, mix in the ricotta and lower the heat.
  • Add the epazote leaves and the corn kernels, as well as the salt, pepper, and Knorr Swiss.
