Mexican Red Rice

  • 1 1/2 cups rice, long grain, washed and soaked in hot water for 10 min.
  • 3 tablespoons vegetable oil
  • 2 Roma tomatoes, cut into quarters
  • 1/4 white onions
  • 1 clove garlic
  • 2 1/2 cups water
  • 1 cube Knorr® granulated chicken bouillon
  • 1/2 cups carrot, cooked and diced
  • 1/2 cups peas, cooked

  • Drain the rice and remove as much water as possible.
  • Heat the oil in a pot and fry the rice, stirring constantly until it is lightly browned.
  • Meanwhile, blend the tomato, onion, garlic, and water. Strain and pour into the pot with the rice.
  • Let cook on low heat for 5 minutes or until the tomato is seasoned.
  • Pour in the water and the Knorr® Suiza Chicken Broth cube, cook on high heat until it comes to a boil.
  • Lower the heat, cover the pot and cook for 10 minutes.
  • After that time, add the vegetables and mix carefully.
  • Cover the pot again and cook for 15 more minutes or until the water has completely evaporated.
  • Separate the grains with a fork and let rest off the heat with the pot covered for 10 minutes, serve.
