Mexican-Style Zucchini with Cheese

A delicious side dish of Mexican-style zucchini, ideal for accompanying any dish. You can sprinkle a little cheese to gratin.

  • 1/2 kilos zucchini , tender
  • 3 ears corn, shelled
  • 2 Poblano chiles, roasted, peeled, and cut into strips
  • 2 tomatoes, roasted, peeled, and chopped
  • 100 grams Chihuahua cheese
  • 1 sprig parsley
  • 1 piece onion
  • 1 clove garlic
  • salt

  • Place the diced zucchini in a saucepan.
  • Add the shelled corn, parsley, strips, onion, garlic, tomato, and oil.
  • Season with salt and pepper.
  • Add a little water and cover on low heat.
  • Let it boil until everything is very soft.
  • At the end, sprinkle the grated Chihuahua cheese.
