500 grams nopal
1 white onion
2 tomatoes
350 grams panela cheese
1 bunch fresh cilantro
4 tablespoons oil

Chop the nopales into very small cubes and boil them, changing the water 3 times and adding baking soda to cut the slime.
Finely chop the onion and sauté it with a little olive oil, add the nopal. Season with salt and pepper. Let it cool and set aside.
Remove the seeds from the tomato and chop it into small cubes.
Slice the panela cheese and grill it in a very hot skillet. Cut it into small cubes and let it cool.
Blend the remaining olive oil with the cilantro, adding a little salt and pepper.
To form the timbale, use a small ring and place a layer of tomato and press down a little, then a layer of cheese and repeat the same with the nopal.
Add a drizzle of the cilantro oil for decoration.
