Nopal Tartare Timbale

  • 500 grams nopal
  • 1 white onion
  • 2 tomatoes
  • 350 grams panela cheese
  • 1 bunch fresh cilantro
  • 4 tablespoons oil
  • salt
  • pepper

  • Chop the nopales into very small cubes and boil them, changing the water 3 times and adding baking soda to cut the slime.
  • Finely chop the onion and sauté it with a little olive oil, add the nopal. Season with salt and pepper. Let it cool and set aside.
  • Remove the seeds from the tomato and chop it into small cubes.
  • Slice the panela cheese and grill it in a very hot skillet. Cut it into small cubes and let it cool.
  • Blend the remaining olive oil with the cilantro, adding a little salt and pepper.
  • To form the timbale, use a small ring and place a layer of tomato and press down a little, then a layer of cheese and repeat the same with the nopal.
  • Add a drizzle of the cilantro oil for decoration.
