Oriental Rolls

Oriental rolls filled with noodles, mango, and other surprises. They are simple and delicious; you can serve them as appetizers or they are also perfect for snacking.

  • 1/2 cups peanut butter
  • 1/3 cups water
  • 2 teaspoons rice vinegar
  • 2 teaspoons fish sauce
  • 1 teaspoon oriental chili paste
  • 24 leaves rice paper, to make the rolls
  • 24 leaves basil, large
  • 48 leaves peppermint
  • 12 sticks surimi
  • 1 stick cream cheese
  • 1 cucumber, peeled, seedless in strips
  • 2 mangoes, peeled in strips

  • Start by making the accompanying sauce for the rolls by mixing the first 5 ingredients in a deep bowl.
  • Take another deep bowl and fill it with hot water.
  • Use hot water to prepare the rice sheets. Soak one sheet in the water for about 2 minutes and place it on a surface to fill.
  • For each roll, place 1 basil leaf, 2 mint leaves, half a stick of surimi, 1 strip of cream cheese, 2 strips of mango, and 2 strips of cucumber. Roll the wrap by closing both sides and folding the leaves inward.
  • Once one roll is ready, transfer it to the serving platter and continue until all the rice sheets are used.
  • Cover the rolls with a damp towel and plastic wrap to keep them moist.
