Oven-Baked Cauliflower with Parmesan Cheese

A delicious cauliflower side dish with a white sauce featuring hints of Parmesan, red pepper flakes, and a bit of nutmeg. Perfect to accompany meats.

  • 6 cups cauliflower, cut into florets
  • 4 ounces bacon, thick, cut into cubes
  • 1/4 cups butter
  • 1/4 cups flour
  • 1 1/2 cups cow's milk
  • 1 clove garlic
  • 1 teaspoon guajillo chili flake
  • 1 cup Parmesan cheese, shredded
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper, freshly ground
  • 1/8 teaspoons nutmeg
  • 1/3 cups breadcrumbs

  • Preheat the oven to 350 F (180 C). Grease a 22cm x 30cm baking dish with butter.
  • Bring a large pot of heavily salted water to a boil over high heat. Once boiling, add the cauliflower florets and cook for 2 minutes. Transfer the cauliflower (draining the water) to the greased dish and let cool for 5 minutes.
  • In a small pan over medium-high heat, brown the bacon, transfer to a plate, and set aside.
  • In the same pan where the bacon was browned, melt the butter. Once melted, add the flour and stir until well combined. Continue stirring and gradually add the milk. (You can whisk with a balloon whisk). Stir until incorporated and no lumps remain.
  • Add the minced garlic and crushed red pepper, continue stirring until thickened. Once thick, add the Parmesan cheese, nutmeg, salt, pepper, and bacon. Stir to combine and pour over the cauliflower in the baking dish. Sprinkle the breadcrumbs on top.
  • Bake until the breadcrumbs are golden brown and the cauliflower is tender, about 25 minutes. Serve immediately.
