Avocado Stuffed with Carrot

Delicious avocados filled with carrot and a bit of peas, also containing some lettuce. Ideal as an appetizer or side dish.

  • 2 potatoes, medium, cooked, peeled, and diced
  • 1 carrot , large, peeled, cooked, and diced
  • 1/2 romaine lettuces , chopped
  • 1 cup peas, cooked and drained (can be canned)
  • 1/4 cups cream
  • 1/3 cups mayonnaise
  • 6 avocados, medium, cut in half lengthwise
  • salt

  • In a bowl, mix the potatoes, carrots, lettuce, and peas.
  • Cut the avocados in half lengthwise, remove the pit, and a bit of the flesh.
  • Add the avocado flesh to the vegetable mixture. Add the cream and mayonnaise, and season with salt.
  • Fill the avocados and serve with crackers.
