  • 5 potatoes, with skin
  • vegetable oil, for frying
  • 20 slices bacon
  • 1 tablespoon salt
  • 1 cup BBQ sauce
  • 2 Habanero chiles, roasted
  • 1/8 onions, roasted
  • 1 clove garlic, roasted
  • 1 tablespoon lime juice
  • 1 tablespoon white vinegar
  • chives, for garnish

  • On a cutting board, cut the potatoes into wedges and wrap them with bacon.
  • Fry at low temperature (160 °C) for a few minutes until you see the skin golden, remove from the oil, place on paper towels, and wrap in bacon, securing with toothpicks if necessary.
  • Fry again at a higher temperature (180 °C) to finish cooking the potatoes and make the bacon crispy. Drain on paper towels and set aside.
  • Blend the BBQ sauce, roasted habanero peppers, roasted onion, roasted garlic, lime juice, and vinegar until the mixture is smooth.
  • In a bowl, add the potatoes with bacon and the BBQ sauce, mix with a spoon until fully combined.
  • Serve hot and garnish with chives.
