Cádiz Potatoes

When the temperature exceeds 40°C in Spain, they usually prepare these potatoes as an appetizer. Its preparation is simple, easy, and delicious; moreover, it is so fresh that it will delight us on a summer afternoon.

  • 4 potatoes, boiled, diced into medium cubes
  • 1/4 onions, julienned
  • 2 eggs, cooked
  • 1/2 cups parsley, finely chopped
  • salt, and pepper to taste
  • 2 teaspoons vinegar
  • extra virgin olive oils

  • Boil the eggs. Let them cool and peel them. Wash the potatoes very well and boil them with skin in salted water. Leave on the heat until tender.
  • Once cooked and cooled, dice into cubes. Add the finely chopped onion, parsley, vinegar, and olive oil. Serve with the eggs sliced on top and sprinkle with chopped parsley.
