  • 190 grams cream cheese
  • 2 tablespoons chipotle chile in adobo sauce
  • 1 tablespoon lime juice
  • 1 teaspoon onion powder
  • 1/2 cups cow's milk, for the sauce
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups chicken, cooked and shredded
  • fresh cilantro, chopped, for garnish

  • Preheat the oven to 200°C.
  • On a cutting board, cut one end of the potatoes lengthwise. Place them on aluminum foil, drizzle with olive oil, and season with salt and pepper. Wrap the potatoes and bake for about 40 minutes or until tender. Remove and set aside.
  • Blend the half cream with the cream cheese, chipotle, milk, lemon juice, onion powder, oregano, paprika, salt, and pepper.
  • Using a spoon, hollow out the potatoes being careful not to break them. Set aside the filling.
  • Heat the olive oil in a skillet over medium heat and cook the onion with the garlic, add the chicken, the potato filling, and the sauce. Cook for about 5 minutes or until thickened, adjusting seasoning.
  • Fill the potatoes with the chicken filling, garnish with chopped cilantro, and enjoy.
