  • 1 cup chorizo
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups fresh cilantro, finely chopped
  • 2 cups cream cheese
  • 1/4 cups cheddar cheese, finely grated
  • 2 tablespoons chile flakes
  • 1 kilo new potatoes
  • 2 liters water
  • 1 tablespoon salt
  • chives, finely chopped

  • Heat a skillet over medium heat, cook the chorizo until it releases its fat, add the onion, garlic, cilantro, cream cheese, cheddar cheese, and chili flakes, and mix until all the ingredients are combined. Place the mixture in a piping bag and set aside.
  • In a deep pot with water and salt, cook the potatoes until they are soft, remove from heat, drain, and on a cutting board, cut them in a cross shape without splitting them completely. Fill with the previous mixture, sprinkle with scallions, serve, and enjoy.
