  • 500 grams new potatoes
  • 200 grams bacon, sliced
  • 1/4 onions, chopped
  • 2 cloves garlic
  • 3 tomatoes, quartered
  • 6 guajillo chiles, seedless and deveined
  • 5 árbol chiles, seedless and deveined
  • 2 chipotle chiles, dry, deveined, and seedless
  • 2 allspice berries
  • 1 teaspoon cumin, whole
  • 1/2 cups chicken broth
  • salt
  • 1 teaspoon vegetable oil
  • fresh cilantro, finely chopped

  • In a pot over medium heat, cook the potatoes with water and salt until soft. Drain and set aside.
  • Wrap the potatoes with the bacon slices and secure with a toothpick. Fry them in a deep pan over medium heat until golden brown and drain on an Elite® Megaroll kitchen towel.
  • In the same pan where you fried the potatoes, fry the onion, garlic, chiles, tomato, allspice, and cumin until the vegetables are softened. Add the chicken broth and cook for 15 minutes. Let it cool slightly.
  • Blend the previous preparation until you obtain a smooth sauce. Fry again with a little oil until it comes to a boil and cook for 15 more minutes.
  • Coat the potatoes with the sauce, sprinkle chopped cilantro, and serve with Elite® ultra napkins.
