Easy and Economical Potatoes

Try this easy and economical potato recipe; they are delicious as a side dish with any meal.

  • 3 potatoes, large
  • 1/2 onions
  • 1 teaspoon olive oil
  • 1/6 liters tomato purée
  • 1 cup water
  • salt, and pepper to taste

  • Wash the potatoes and boil them in a little water with a pinch of salt.
  • Finely chop the onion.
  • Heat the oil and sauté the onion until it becomes translucent.
  • Cut the boiled potatoes into cubes of approximately one cubic centimeter (you can get about 30 cubes from one potato) and add them to the pan with the onion.
  • Add the tomato puree and stir to prevent sticking until the puree changes color slightly, then add the cup of water, salt, and pepper to taste.
  • Lower the heat and let it boil for 10 to 15 minutes, stirring occasionally to prevent the potatoes from sticking.
  • Serve.
