Wash the potatoes and boil them in a little water with a pinch of salt.
Finely chop the onion.
Heat the oil and sauté the onion until it becomes translucent.
Cut the boiled potatoes into cubes of approximately one cubic centimeter (you can get about 30 cubes from one potato) and add them to the pan with the onion.
Add the tomato puree and stir to prevent sticking until the puree changes color slightly, then add the cup of water, salt, and pepper to taste.
Lower the heat and let it boil for 10 to 15 minutes, stirring occasionally to prevent the potatoes from sticking.
Serve.
