1 kilo potato , cut into large pieces
1/2 cups olive oil
1 pinch ground black pepper
1/4 cups fresh parsley, finely chopped
salt
dried thyme
1 kilo tomato
1 white onion
1 clove garlic
2 teaspoons honey
40 grams brown sugar
1/4 cups white vinegar
ground cloves
black pepper
salt
1/2 teaspoons mustard

Preheat the oven to 230°C.
Mix the previously cut potatoes with olive oil, salt, and pepper to taste on a greased baking sheet. Make sure they are not piled up.
Bake the potatoes for 20 minutes, flip them, and bake for another 20 minutes.
Remove from the oven, sprinkle with parsley and thyme, serve.
For the homemade ketchup: Boil the tomatoes and cut them into cubes.
Sauté the chopped onion and garlic. Add the diced tomato and let it cook on low heat for 40 minutes or until it forms a paste.
Blend the mixture, add vinegar, salt, and spices.
Return to the heat, stirring frequently until it thickens. Let cool and refrigerate in a glass container.
